A generic restaurant manual designed for restaurateurs who do not have the resources of a large corporation to provide them with an operations manual.

ROBBERY

Robbery is the taking property in the possession of another from his/her person or immediate presence, without consent, by means of force or fear. Usually a weapon such as a pistol or knife is used.

How can robberies be prevented?

The highlights of the robbery prevention program are summarized below. Many of these procedures are explained in more detail elsewhere in this manual.

Opening procedures - Make the opening MIC and Crew Members aware of potential robbery situations in and around the restaurant property.

Back Door Procedures - Help all employees understand the most effective preventive practices during all shifts. See the Crime Prevention section of this manual.

Closing Procedures - Present alternate methods for varied numbers of employees to safely exit the restaurant at the close of business.

Alarm Systems - Alarm systems provide an effective deterrent to robberies. Instruct all employees regularly on the proper operation of the alarm system. Test the alarm system monthly. More information can be found in the Alarm Systems section of this manual.

Identification - Only authorized city or county officials with valid identification and authorized vendors are allowed behind the front counter of a restaurant.

Lights - Keep selected lights on throughout the night so that the restaurant is not completely dark. This allows the opening employee to safely conduct an opening inspection and makes any intruders visible from outside.

You may require parking lot and outside lighting to remain on for a specified time after closing to provide additional security for closing employees. Accomplish this with installation of electronic timers.

Other Robbery Prevention Methods - At least 1 employee must be on the front line or in the dining room at all times.

Employees must not discuss sales volumes, cash handling policies, banking information, numbers of employees, as well as opening, closing, and back door procedures with non-employees.

Compliance with cash control, safe and banking procedures helps to eliminate or reduce the potential for robberies. Refer to the sections of this manual which outline these procedures.
