A generic restaurant manual designed for restaurateurs who do not have
the resources of a large corporation to provide them with an operations manual.
The following is an excerpt from the section listed below:
Employee referral. Ask employees if they know individuals who would work well in their type of job. Give the employee a bonus of a certain dollar amount for every new employee hired through a referral and a second bonus if both the existing employee and new employee stay with the operation for 3 months. This is a great idea, especially since statistically, 90% of those hired leave within the first 90 days of employment.
Hunt for potential employees. The best employees are the ones that are currently working. Go to other restaurants and watch the employees. When you find the ones that exhibit the trait that you wish to have on your staff, offer an interview if the employee is not satisfied at their current job. Never ask how much they are making and then offer them more. Rather, ask them to come by to chat if they are not happy with their current situation.
