REQUIREMENTS FOR BACTERIA GROWTH
Bacteria have four main requirements for growth. They are:
Each type of bacteria has an optimal temperature for growth. In general, bacteria will grow in the temperature range from 40°F to 140°F (4°C to 60°C). Foods must be kept either above or below this temperature "danger zone.. A good rule to follow is: keep hot foods hot and cold foods cold. Below is a thermometer showing the critical temperatures:
Check with local health department as the required temperatures or temperature zones vary. The temperatures specified in this manual are those which are more commonly specified.
Bacteria need (typically) foods that are high in moisture content to grow. A product such as sugar does not contain a sufficient amount of moisture to allow bacterial growth. However, most of our food products do contain a sufficient amount of moisture to be a good growth medium.
